做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上(shàng )擦一遍,放(fàng )两勺油,待(dài )油六成(chéng )热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其他(tā )材料,武火煮沸,转(zhuǎn )中(zhōng )小(xiǎo )火煲一个半小时,下盐调味即可品尝。 -
