做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放(fàng )两勺(sháo )油,待油六(liù )成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品尝。 -
